CHOCO MUFFIN RECIPE

Here's the second part of baking with Tonet. This time we've tried creating choco muffins - a treat for temporary boost of serotonin, a happiness body chemical. This just adds to the fun

Be sure to sift dry ingredients twice or thrice for a more luscious taste..

Ingredients:
2 cups all-purpose flour
1 tbsp. baking powder
3/4 cup white sugar
1 tsp. Salt
1 egg beaten
1 cup milk(evap)
1/2 cup cocoa powder(Ricoa)
2 cups choco chips
2 tbsp butter

Procedure:
1. Preheat the oven to 450 degrees F.
2. Sift together flour, cocoa and baking powder.
3. Cream butter, sugar and salt together. Add the egg and beat until the mixture is light and fluffy. Add the milk.
4. Pour liquid mixture all at once into the dry ingredients. Then, add the choco chips.
5. Stir lightly so dry ingredients are moistened (25-30 strokes).
Note: Be careful not to overmix the batter to avoid uneven texture of your product.
6. Grease the muffin cups (or use paper liners). Spoon batter into the cups filling them about 3/4 full (or any amount desired).
7. Bake in preheated oven for 20-30 minutes or til golden brown.
Note:put 2 to 3 tbsps of water in empty muffin cups, you don't want your muffin pans to warp. Muffins also burn faster when baked in pans with empty cups.

We ran short of butter so we weren't able to make the frosting. In case you like to add frosting here's a recipe. I got this from cupcake-creations.com

Chocolate Butter Cream Frosting

Ingredients

8 oz confectioners sugar
5 oz softened butter
2 tsp hot water
2 tbls any brand of cocoa powder

Method
1. Melt cocoa powder in water.
2. Cream butter and sugar using electric mixer.
3. When combined well, add the cocoa mixture then beat until it achieves creamy, smooth texture.

Baking is one of the gratifying activities for girl bonding. On the 26th of August, 2010, I invited the best of my best buddies, Tonet, over our house to bake delectable brownies. Weee! We made this unwind time hilarious and pleasurable as it should be. My youngest brother Kenneth also joined the fun.

This is a modified recipe from pinoyrecipe.net but I guess I was mistaken on revising the frosting, ahaha. It turned out to be too thick and so much sweet - a disgusting taste .. so I'm writing here the original recipe for the frosting..

Please research about the baking terms used before starting..It shall be a great help ^.^

THE ESSENCE OF GIRLFRIENDS

Love shared in Friendships is apparently different to a Lover's love..Lovers may come and go while friends are always there to stay. Essential parts of friendly love are girlfriends..

"Every Teen Girl's Little Pink Book on Girlfriends", a Christian book on girlfriends by Cathy Bartel, made me realize how valuable girlfriends are. It's a teen book but the contents of book apply to girls and women of all ages. Ladies may have their husband, boyfriend(only some of us. I'm one of those who lack this HAHA.. .), guy friends and crushes but its typically an extraordinary, heart-warming thing when we jam and deal issues with girlfriends. The book implies that girlfriends become more important as we grow with age. We may have commitments or get tied up in marital relationships but we still need girlfriends whom we refer to as sisters. As a lady, you may find guys to be generally caring, understanding, and protective. You may enjoy their company but still it's not an excuse to forget girl friends. You may have families and children but we need not lose contact with girl friends. No matter how you are far apart there isn't an excuse from keepin in touch. Making phone calls, sending text messages or e-mails, or writing letters(old-fashioned but still effective hehe) is possible.

Our girlfriends make a great impact on our lives not only during gales of laughter but also on times of unbearable pains. Any of your friends are your lovers but not all lovers can treat you as a friend. A love of a girlfriend is truly a distinctive thing.

Hmm..anyway, you can purchase the book here "Little Pink Book on Girlfriends".

LOVELORN

This poem portrays unrequited love. I thought of using the term "paramour,"which is the origin of the band name "Paramore", but its meaning is illicit love. Dissimilarly, "lovelorn" signifies one whose love is never reciprocated. Ouch! :( bitter.. Hmmm..lol.

Lovelorn

Did you notice my sidelong glances?
Thou amidst us are unbreakable fences?
This concealed emotions
Got myself incisions.

I tried dumping false thoughts
With feelings that i fought
A broken heart is a cliche
For those thrown with dry bouquets.

Daydreaming soothes me
In days of mystery
Cause only then I see
Your eyes are only for me.

I am a lovelorn
Desirous yet forlorn
Hoping you'll perceive what I feel
Behind my cloak of tears.

Can't you see my radiant eyes
In every moment we collide?
Do you see how surreal
The happiness I can't conceal?

It's inevitable to blame
Unanswered love of a bumbling dame
Trapped in a field of fancies,
A world of broken fantasies.

I am a lovelorn
Admired you for quite long
When shall they sound clear?
The pleasing words I long to hear.

Though you fail to notice
Thoughts of you shall be cherished
Image of you shall last
While I watch you beyond tinted glass.

Well That's it..You can suggest some revisions ..Thanks :)

PINEAPPLE CHIFFON CAKE RECIPE

Here's the recipe of the chiffon cake I and my sister made for my maternal grandma a day before her birthday, May 13.

Originally the recipe is for Orange Chiffon Cake but we used pineapple juice instead of orange cause we found it more appetizing.

Ingredients:
3 cups cake flour
1. tbsp. baking powder
3/4 tsp. Iodized salt
1 cup white sugar
10 egg yolks
3/4 cup Pineapple Juice
1/2 cup vegetable oil
1 tsp. vanilla

Meringue:
10 egg whites
1/4 tsp. Cream of tartar
1 cup white sugar

Procedure:

1. Sift dry ingredients together in a mixing bowl(except 1 cup sugar and cream of tartar for meringue).

2. Make a well in the center of the flour mixture. Add in proper addition egg yolk, juice, oil and vanilla. Mix with a wooden spoon for 300 strokes.

3. Combine egg white and cream of tartar in a large bowl free from grease. Beat until foamy.

4. Add sugar gradually while beating until stiff but not dry peaks are formed.

5. Pour the batter into the streams over the entire surface of the meringue. Fold gently while turning the bowl around for sufficient blending.

6. Pour into an ungreased pan lined with wax paper.

7. Bake in preheated 350 F oven for 45-60 minutes until done or until tester inserted in the center comes out clean or shrinks slightly from the sides of pan.
8. Invert immediately on the rack, use a spatula to loosen the cake then cool it completely.

Heres the final product. I failed to take a nicer picture. Lol.

Need help?..Here's how to
Fold and how to Separate egg yolk from egg white.

Anyway we weren't able to create a perfect chiffon cake coz we are newbie bakers.. ^.^ . But promise we created a delicious one..

"SAKLOT" OF EASTER SUNDAY IN MALINAO,ALBAY

Christian Bicolanos uniquely celebrate Easter sunday, which highlights Jesus Christ's ressurection, in early dawn. The ceremony begins with a procession and ends up with the "salubong"(in Tagalog) or "saklot"(in Bicol) where the sorrowful mama mary encounters her risen son, Jesus Christ.

At the start of the "saklot", cute angels surrounding the Sorrowful Mama Mary sing the "Regina Coeli," which means "Queen of Heaven."

Simultaneously, three little angels are successively brought down from an upper deck of a castle-like structure using poles to take out the veil of the Sorrowful Mother. Each of the three angel sings her own line in the Regina Coeli.

Finally, the Easter Sunday mass is held.. .

OUR DANGEROUSLY FUNNY HIKING TOWARDS SUGCAD PLAZA

March 25,2010 was my first time to walk through the steep trails of Mount Malinao. I and my two girl companions (Xieh and Khetz) were accompanied by Sugcad guy residents (some of them were Xieh's classmates) towards the Sugcad Plaza. Sugcad, by the way, is a baranggay in my hometown, Malinao.

Midway, we stopped by a spring. I paddled my feet in the freely flowing crystal clear water as we sat on a huge boulder.

Our guy friends seemed so much accustomed with mountainous living that I and my girl friends were amazed on how they prepared their lunch. Moreover, the hiking was never boring since some of the guys were just frantically humorous. Lol.

Resuming our way to the top was again quite hazardous. The narrow paths were too close to elevated cliffs. I got so scared that I can't seem to look down the slopy areas and my thighs started trembling. Despite this, I still managed to get to the Sugcad Plaza with the group. Whew, I was relieved as I felt the cool mountain breeze. The sight of the picturesque part of Albay (our province) was undeniably amusing. I wasn't able to take clear pictures of it though. Sigh..

Hiking is a real adventure; we risked life and limb just to get to the destination and be able to witness and appreciate nature's exotic beauty. Truly, it resembles our life's journey. Sometimes we try to play it safe. At times we try to fight and though we slip up, fall down the muddy ground or rocky path, we courageously struggle to carry on and fulfill our dreams.

AFTERGLOW: THE SONG ABOUT MY INTRINSIC FAIRYTALE

Being too inspired by the fairytale-themed Taylor Swift songs, I managed to write my own. This portrays the fairytale of my life and is one of my favorite. I've done this last May 2009.

Afterglow

Verse 1:
I take a view of floral beauty
amazed by its fantastic aura
There you are at the other end
Patiently waiting for someone

Yeah and this is a tale
About you and me
In a fairyland out of my wish

Refrain:
The wind is blowing towards us
It implies our blooming emotions
Flower petals float around us
As you eagerly dance with me
That's the way it should be

Verse 2:
We laugh together
As winter begins
Gaze at the rainbow
After a heavy rain

You pick up blue roses
And offer them to me
You draw me close,
Put your eyes on me

Oh and this is a tale
About you and me
In a fairyland out of my wish

Rep chorus 2x

Everything is enchanting yet so real,
We part as the sun sets
While the humid air sends me to an afterglow

I think there is not a need to ask for whom I've written this piece.lol. Feel free to criticize. :)
